Certain foods can cause an inflammatory response which is linked to every disease known to mankind. Gluten which is found in grains is one of the best known foods to cause an inflammatory response. Gluten is a protein which triggers the chemical zonulin to be released in the GI tract lining. Zonulin tells your GI tract lining junctions to open up. Normally the GI tact lining junctions are very tightly knit which only allows for microscopic nutrients to pass into the blood stream. When your GI tract lining becomes opened up by the effects of zonulin, it creates what is known as leaky gut.
Gluten has a chemical structure similar to the chemical structure of your thyroid tissues which leads to the concept of molecular mimicry. Your immune system may mistakenly attack your thyroid cells thinking it’s gluten. Another common food which elicits an immune response due to it’s inflammatory properties is cow dairy products. Cow dairy contains the proteins Casein 1 which are very inflammatory. Fortunately, as an alternative, goat dairy contains Casein 2 which is not inflammatory and will not cause an immune response. There may be other foods  that you are consuming which can cause an immediate immune response and inflammation. Some foods may have a delayed  immune and inflammatory reaction which may take up to 4 days to appear.
